Hurlikaayi Palya, or beans stir fry, is a simple and flavorful South Indian stir-fry made with green beans, spiced with palyada pudi, and tempered with mustard seeds and curry leaves.

Palya is a traditional South Indian stir-fry made with vegetables like beans, carrots, or potatoes. It’s typically served with rice or chapati, offering a simple yet delicious way to enjoy fresh vegetables.

Ingredients

  • 2 cups diced green beans
  • 2 tablespoons palyada pudi
  • 1 tablespoon oil or ghee
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1-2 dried red chilies (optional)
  • A pinch of asafoetida (hing)
  • 1-2 sprigs curry leaves
  • Salt to taste
  • Fresh coriander leaves for garnish (optional)

Directions

  1. Cook the beans:

    • Steam or boil the beans until they are just tender but not mushy. Drain and set aside.
  2. Prepare the Tempering:

    • Heat oil or ghee in a pan. Add mustard seeds and cumin seeds. Let them splutter.
    • Add dried red chilies, curry leaves, and a pinch of asafoetida (hing). Sauté for a few seconds until fragrant.
  3. Add Beans:

    • Add the cooked beans to the pan. Stir well to coat them with the tempering.
  4. Add Palyada Pudi:

    • Sprinkle the palyada pudi over the vegetables and mix thoroughly. Add salt to taste and cook for another 2-3 minutes, allowing the spices to blend with the vegetables.
  5. Garnish and Serve:

    • Garnish with fresh coriander leaves if desired.
    • Serve hot with rice, chapati, or as a side dish.
